Chicken Tenderloins
Greek Seasoning
1 Crown of Fresh Broccoli
1 Head of Fresh Cauliflower
2 Zucchini
2 Yellow Squash
Jasmine Rice
Olive Oil
Tzatziki
Hummus

Start by pre-heating your oven to 400° and begin boiling water for your Jasmine Rice. In this recipe, I used 4.5 cups of water to make 3 cups of Jasmine Rice.
With our start by washing and chopping your veggies and then placing them on a sheet pan to be coated with olive oil. Next, sprinkle the Greek seasoning all over the veggies. Massage the oil and seasoning into the veggies to make sure they are well-coated.
Next, place your chicken tenderloins on a sheet pan (or in a glass baking dish), drizzle with olive oil, and sprinkle with Greek seasoning. Around this time, the water for your rice should be boiling and you can add your rice to the water. Be sure to turn down the heat and simmer for 15-20 minutes (until all the liquid is absorbed).
Place the veggies and chicken into the oven and cook for 15-20 minutes. Once the chicken and veggies come out of the oven, chop your chicken into bite size pieces, and now it’s time to assemble into Mediterranean bowls!
When creating your bowl, set the rice on the bottom and top with the chicken, veggies, hummus, tzatziki, and feta. Dinner is served!

What inspired this Mediterranean recipe?
We used to have a local restaurant that was the Mediterranean equivalent to Chipotle – You’d be able to customize your own bowl with various delicious ingredients that are featured in this recipe. The owner(s) were Greek, so the experience was genuine and was their invitation to take your tastebuds on a journey around the world.
Unfortunately, this Mediterranean restaurant did not survive following the 2020 pandemic (like so many), which left me to figure out how to replicate something that was either equally delicious OR attempt to try and make something better which my whole family would enjoy. After a few trials, I found this to be the perfect Mediterranean Dinner recipe for the family and I to enjoy! My kids love the combination of flavors and my husband truly looks forward to this meal in our menu rotation.
Of course, the veggies and meat selection can be customized to your liking – I’ve found this combination with the chicken to work best with the seasoning and delicious flavors that compliment the Mediterranean styled spices, feta cheese, tzatziki, and hummus options that are included. Served over Jasmine Rice, this Mediterranean meal is a hearty one and is one we seem to consider a comfort food. The fresh veggies also make for a colorful display that not only entices your eyes, based on its delicious appearance, but will also tantalize your tastebuds with its rich flavors.

Mediterranean Sheet Pan Dinner

- 1 lb Chicken Tenderloins
- 2 tbsp Greek Seasoning
- 1 Crown of Fresh Broccoli

- 2 Zucchini
- 2 Yellow Squash
- 2 tbsp Olive Oil
Jasmine Rice
- 3 Cups Jasmine Rice
- 4.5 Cups Water
Size Ingredients
- Tzatziki
- Hummus
- Feta Cheese
Instructions
- Preheat oven to 400°
- Wash and chop vegetables
- Spread veggies on a pan and coat with olive oil, then sprinkle with Greek seasoning.
- Place chicken tenderloins on a separate pan and coat with olive oil, then sprinkle with Greek seasoning.
- In a separate pot, bring water for your rice to a boil.
- When ready, add the rice to the pot of boiling water at the same time you put your sheet pans into the oven.
- Cook the veggies and chicken for 15-20 minutes.
- Cook the rice until all liquid is absorbed.
- Once chicken is done cooking, let stand for 5 minutes, then cut into bite size pieces.
- Assemble bowls with preferred toppings, and enjoy!
