Mediterranean Sheet Pan Dinner

Ingredients
  

Cooked Ingredients

  • 1 lb Chicken Tenderloins
  • 2 tbsp Greek Seasoning
  • 1 Crown of Fresh Broccoli
  • 1 Head of Fresh Cauliflower
  • 2 Zucchini
  • 2 Yellow Squash
  • 2 tbsp Olive Oil

Jasmine Rice

  • 3 Cups Jasmine Rice
  • 4.5 Cups Water

Size Ingredients

  • Tzatziki
  • Hummus
  • Feta Cheese

Instructions
 

  • Preheat oven to 400°
  • Wash and chop vegetables
  • Spread veggies on a pan and coat with olive oil, then sprinkle with Greek seasoning.
  • Place chicken tenderloins on a separate pan and coat with olive oil, then sprinkle with Greek seasoning.
  • In a separate pot, bring water for your rice to a boil.
  • When ready, add the rice to the pot of boiling water at the same time you put your sheet pans into the oven.
  • Cook the veggies and chicken for 15-20 minutes.
  • Cook the rice until all liquid is absorbed.
  • Once chicken is done cooking, let stand for 5 minutes, then cut into bite size pieces.
  • Assemble bowls with preferred toppings, and enjoy!
