This adorable patriotic poke cake is the perfect dessert to make for you Memorial Day or 4th of July party – It’s Red, White and Cute! 🇺🇸
The jello and cool whip make this cake light and refreshing, as well as incredibly moist and fun. This cake perfect summer treat for cooling off after all that hot summer fun!
Jump to RecipeWhat you’ll need to make this adorable Patriotic Poke Cake:
– 1 box of white cake mix
– 1 box of red jello
– 1 box of blue jello
– 1 16 oz tub of cool whip
– Red white and blue sprinkles
– Gold sprinkles for the popsicle sticks
– 2 boxes of Mike ‘n Ike’s (I used original and berry flavor to get the perfect red and blue colors)
Bake the cake according to the package directions. Once the cake is cooled poke holes in it with the back of a wooden spoon.
Prepare the jello according to the directions, then pour or spoon the jello over the holes. Once the cake is covered in jello, place in the fridge for about 30 minutes.
Once the 30 minutes is up, spread the cool whip all over the cake, making sure it’s nice and smooth, then add a border of sprinkles around the edge of the cake. Take 2 red Mike ‘n Ike’s and place them side by side. Place 2 gold sprinkles at the bottom. Repeat alternating with red and blue Mike ‘n Ike’s.

What inspired this Patriotic Poke Cake recipe?
If you’ve ever had a poke cake before, you’ll know just how refreshingly delicious they are. Something about the Jell-o mixed into the moist white cake makes for a chilled cake that is truly unlike anything else out there. Topped with a creamy cool whip topping, it’s a masterpiece of “chilled” desserts without being a frozen dessert. We’ve had this over the years at family 4th of July events and after running around in the yard and swimming to burn off the afternoon BBQ feasts, this was the dessert all of the kids came running to!
Will other Jell-o flavors work?
Absolutely! If you’re looking to maintain the Red and Blue color scheme for a Patriotic Poke Cake, there are other Jell-o flavors that boast the same red and blue colors – Just keep in mind that those flavors will change the taste of the cake. If you’re looking to try something non-patriotic, you can utilize any Jell-o flavor of your choice! For example: I imagine an Orange Jell-o flavor would be absolutely delicious with this recipe and would make something that probably tastes similar to an Orange Creamsicle! 😋 (That might be for another recipe in the future now that I think about it)
Can you make this with a chocolate cake?
I’ll be honest, I’ve never tried it with a Chocolate Cake. Coloring wise, the cake would not display any of the red or blue Jell-o baked in and the flavors would be competing with a rich chocolate flavor rather than a more tame white cake flavor. That said, perhaps a Chocolate ‘Poke cake’ filled with cool whip topping could be a fun alternative! As in many recipes, it takes a little bit of experimenting and trying to find something that will eventually work for you (or for you and your family).

Patriotic Poke Cake
Ingredients
- 1 box White Cake Mix
- 1 box Red Jello
- 1 box Blue Jello
- 16 oz Tub of Cool Whip
- .5 cup Festive Sprinkles (Red, White, Blue, and Gold)
- 2 boxes Mike 'n Ike's (Original and Berry Flavor) To get the perfect red and blue colors
Instructions
Cake
- Begin by baking cake according to package directions.
- (Ingredients may include water, oil, and eggs)
- Once the cake is cooked and cooled, poke holes in it with the back of a wooden spoon.
Jello
- Prepare Jello according to the directions on the box (liquid)
- Pour or spoon the jello over the holes made in the cake
Chill
- Once the cake is covered in Jello, place in the fridge for about 30 minutes.
Decorate
- Once 30 minutes is up, spread Cool Whip all over the cake, making sure it's nice and smooth.
- Add a border of sprinkles around the edge of the cake.
- Take 2 Red or Blue Mike n' Ike's and place them side by side.
- Take 2 gold sprinkles and place them at the bottom of the Mike n' Ike's.
