Last December, my husband and I joined some friends to experience ‘Mickey’s Very Merry Christmas Party’ at Walt Disney World which was a truly magical evening filled with Christmas magic, yummy foods, and a ton of other festive surprises! During the multi-hour long event, we stopped by one of the eateries to get something to eat and came across a ‘Holiday Pot Roast Melt’ that was shockingly so delicious that I KNEW it was something that I was going to try and recreate at home!
Jump to RecipeWhile many foods at the Most Magical Place on Earth aren’t usually worth writing home about, this delicious sandwich was definitely worth recreating at home and I couldn’t believe that I was able to create something that wasn’t only just as good as that night in the Magic Kingdom – but that was BETTER! (At least, so my husband says)
This festive sandwich is packed with so much flavor and somehow sets the mood for the Holiday Festivities within each and every bite. Perhaps it’s the slight juiciness in the Pot Roast that blends the flavors between the cheese and the bread, or the fact that the bread is buttered and grilled to perfection while carefully holding in the amazing mixture of a perfectly cooked pot roast with a delicious and generous serving of perfectly melted cheese! (Writing that last sentence literally caused me to salivate).
This meal is perfect for dinner, but could also be served for lunch – It all depends on what your schedule looks like, because I recommend cooking this Pot Roast Melt meat in your slow cooker to maximize the juiciness and tenderness of the meat you’ll be using. You’ll also need to have a large skillet or griddle (preferably) to easily prepare this meal for your family.
And while I might associate this meal with Mickey Mouse and his magical Christmas party, this is a perfect meal for any time of year.

Ingredients
2lbs London broil
2tbs of yellow mustard
3tbs of brown sugar
2 1/2 tsp paprika
2 tsp garlic powder
2 tsp onion powder
1 1/2 tsp salt
1 tsp black pepper
2/3 cup of beef broth
12 slices of provolone
12 slices of cheddar cheese
8 tbsp of butter
1 loaf of brioche sandwich bread
Instructions for the Meat
- Make the dry rub for the meat by combining the brown sugar, paprika, garlic powder, onion powder, salt and pepper.
- Coat the bottom of the roast with 1 tablespoon of the yellow mustard then sprinkle half of the dry rub over it.
- Flip the meat and coat the top with the other tablespoon of yellow mustard and cover it with the remaining dry rub ingredients.
- Carefully pour the beef broth into the crockpot, being careful not to wash the dry rub off the meat.
- Cover and cook on low for 8 hours.
- Once the meat is done cooking, shred the meat with 2 forks
Preparing the Pot Roast Melt
- Butter two pieces of bread and place the cheese on either side of the bread, then place the meat in between the slices of bread and place on a hot griddle or skillet.
- Cook on each side until the bread is golden brown and the cheese is melted.
- Remove the Pot Roast Melt from griddle, cut in half and enjoy!
What inspired this Pot Roast Melt?
As noted above, we ordered the Holiday Pot Roast Melt at ‘Cosmic Rays’ during Mickey’s Very Merry Christmas Party last December. The portion size was generous and it was truly a remarkable menu item worth recreating at home! While the Disney version was pretty incredible, I feel this homemade version is so much better – and I think it might be because I am making everything incredibly fresh and can choose the type of bread, how much cheese to use, and even how much meat to serve on it!
