In a world where hundreds of Chicken Noodle Soup recipes exist, I am convinced this will be the one that your family will become addicted to – I mean it! This might be the Chicken Noodle Soup dinner meal that your kids and your spouse might come back for seconds, or thirds, or dare I say fourths! I call it ‘Crack Chicken Noodle Soup’ because it’s so perfectly tasty, delicious, and so incredible homey. This is an addicting comfort food I think you’ll absolutely love!

Ingredients:
1 lb of cooked chicken, or rotisserie chicken
3 tbsp of butter
3 tbsp of flour
1/2 cup of chicken stock
1/2 cup of milk
1/2 tsp of garlic powder
32 oz of chicken stock
1 cup of milk
2 cans of sliced carrots
1 1 oz packet of ranch seasoning
8 oz of shredded cheddar cheese
8 oz of softened cream cheese
16 oz of small shell pasta
The Process:
We’ll start by making a roux with butter and flour in a medium sauce pan. In case you didn’t know, a roux is nothing more than a thickening agent and flavoring used in cooking that’s made by cooking equal parts fat (butter) and flour together on low to medium heat. We’ll mix the ingredients and whisk them together over a medium-high heat for 1 minute.
Next, we’ll add in milk and chicken stock while we continue to whisk well until the mixture starts to thicken up. Once thick, add in some garlic powder and stir ingredients together well. Here, you’ll add softened cream cheese to the mixture and whisk well to combine the ingredients together and then will also add a packet of ranch dressing mix to the cream cheese mixture and continue stirring well. This will complete your roux!
Now, in a separate large stock pot, we’ll add the remaining chicken stock and milk and stir together over medium heat. Here we’ll add the additional roux cream cheese mixture to the stock and whisk well to combine. Next, we’ll add in the chicken and drained carrots and then bring to a boil. Once the boil has started, add the pasta and cook the pasta according to the package directions (which is typically about 11 minutes).
Once the pasta is tender, add shredded cheese and stir well to make sure it has all melted. The meal is now ready to be served – So gather the family (or even some friends) and enjoy this delicious Crack Chicken Noodle Soup together!

As life is with 6 kids and the constant on-the-go life we live, we’re also prone to coming down with something throughout the year. I believe nothing helps your family feel better than a hearty comfort food, made with love and shared with those you call your own.
While I’ve tried various Chicken Noodle Soup recipes over the years, I wanted to try adding some new flavors and see if we could throw the recipe over the top… Perhaps it’s the cream cheese, or maybe the ranch dressing mix, but the flavors are such a rewarding treat to help make everyone feel better – And even if no one is sick, it’s the perfect meal for sweater weather! Create the Roux
- Using butter and flour – Melt the butter in a medium sauce pan, add the flour and whisk well over medium-high heat for 1 minute.
- Add in milk and chicken stock and continue whisking well until the mixture starts to thicken up. Once it's thick, add the garlic powder and stir it well.
- Add the softened cream cheese to this mixture ad whisk well to combine.
- Add ranch seasoning to the roux mixture and stir well.
Mixing all ingredients
- Add the chicken stock and milk to a large stock pot and stir together over medium heat.
- Add the cream cheese mixture to the stock pot and whisk well to combine.
- Add in the chicken and drained carrots.
- Bring the pot to a boil and then add small shell pasta. Cook the pasta according to the package directions (usually about 11 minutes).
- Once the pasta is tender, add the shredded cheese and stir well to make sure it's all melted.
- Serve and enjoy!
