Ingredients
  

Creating the Roux

  • 1 lb Cooked Chicken (Consider a rotisserie chicken)
  • 3 tbsp Butter
  • 3 tbsp Flour
  • 1/2 cup Chicken Stock
  • 1/2 cup Milk
  • 1/2 tsp Garlic Powder

Mixing Everything Together

  • 32 oz Chicken Stock
  • 1 cup Milk
  • 2 cans Sliced Carrots
  • 1 pkg 1oz Ranch Seasoning
  • 8 oz Shredded Cheddar Cheese
  • 8 oz Softened Cream Cheese
  • 16 oz Small Shell Pasta

Instructions
 

Create the Roux

  • Using butter and flour - Melt the butter in a medium sauce pan, add the flour and whisk well over medium-high heat for 1 minute.
  • Add in milk and chicken stock and continue whisking well until the mixture starts to thicken up. Once it's thick, add the garlic powder and stir it well.
  • Add the softened cream cheese to this mixture ad whisk well to combine.
  • Add ranch seasoning to the roux mixture and stir well.

Mixing all ingredients

  • Add the chicken stock and milk to a large stock pot and stir together over medium heat.
  • Add the cream cheese mixture to the stock pot and whisk well to combine.
  • Add in the chicken and drained carrots.
  • Bring the pot to a boil and then add small shell pasta. Cook the pasta according to the package directions (usually about 11 minutes).
  • Once the pasta is tender, add the shredded cheese and stir well to make sure it's all melted.
  • Serve and enjoy!
