Dr. Pepper Creamy Coconut Chocolate Cake

A delicious take on a Double Fudge Chocolate Soda Cake using Dr. Pepper's Creamy Coconut Soda!

Ingredients
  

For the Chocolate Cake

  • 2 cups Flour
  • 2 cups Sugar
  • 1/2 tsp Salt
  • 1 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1 cup Butter
  • 1/4 cup Sweetened Cocoa Powder
  • 1 cup Dr. Pepper Creamy Coconut Soda
  • 1/2 cup Buttermilk
  • 2 Eggs
  • 1 tsp Vanilla Extract

For the Glaze

  • 1/2 cup Butter
  • 1/4 cup Unsweetened Cocoa Powder
  • 1/2 cup Dr. Pepper Creamy Coconut Soda
  • 4 cups Sifted Powdered Sugar

Instructions
 

  • Preheat oven to 350° and grease a 9x13” pan.
  • Mix together flour, sugar, salt, baking soda and cinnamon in a large bowl.
  • In a saucepan over medium high heat, melt together butter, cocoa powder, Dr. Pepper Creamy Coconut, and buttermilk. Bring to a boil, then remove from heat.
  • Add wet ingredients to dry ingredients and whisk well to combine. Then add eggs and vanilla extract, and whisk well to combine.
  • Pour cake mixture into greased pan, and place in the oven to bake for 30 minutes
  • Once cake is done baking, remove from the oven.
  • Start making the glaze by melting butter, unsweetened cocoa powder and Dr. Pepper creamy coconut together in a large sauce pan. Once the ingredients come to a boil, remove from heat and start stirring in the sifted, powdered sugar. Make sure to whisk well so there are no lumps.
  • Pour the melted glaze over the cake.
  • Allow the cake to rest for 15-30 minutes
  • Serve it up and enjoy!
